Since you are casting only one mortar in a cold pit, initial cooling and solidification will be fast. Verbruggen put cold molds in the pit,but he put many in so that the pit became hot during casting and solidification became slow. Once solid, cooling should take place fast to reduce crystal growth.
Maybe try casting 5 or 6 mortars together?
